Ingredients
Cut Potato, Onion, Tomato and Brinjal into small pieces. Crush Ginger and Garlic to make fine paste. Heat the pot. Put 1+1/2 serving spoon mustard oil and heat it. Now put Onion seed, Fennel seed, Cumin seed, Mustard seed and Fenugreek seed in oil. Add Onion and saute it on medium flame. Add red and green chilli. Then add ginger garlic paste. Add Potato now. Stir it well and cover the pot with lid and let the potato cook for 3 to 4 minutes. Add pinch of Asafetida and turmeric powder. Now add slices of Brinjal. Mix them well. Turn the flame to low. Add salt to taste now. Cover the pot with lid and cook for 6 to 8 minutes. Stir it in between at an interval of 2 minutes. Now add Coriander powder, Garam masala and red chilli powder. Mix well. Also add chopped Tomato at this time. Again close the lid and cook for another 2 minutes. After that at the end cook it at medium flame for 1 minute to make it bit crispy.
