Baingan Aloo Ki Sabji Potato Eggplant vegetable Recipe

Ingredients

  • Eggplant / Brinjal : 1/2 kg
  • Raw Potato: 3
  • Onion: 1
  • Tomato: 2
  • Red Chilli: 1
  • Green Chilli: 1
  • Garlic Cloves: 4
  • Ginger: 1/2 inch
  • Cumin Seed: 1/4 Tsp
  • Mustard Seed: 1/4 Tsp
  • Onion Seed: 1/4 Tsp
  • Fennel Seed: 1/4 Tsp
  • Fenugreek Seed: 1/4 Tsp
  • Turmeric Powder: 1/2 Tsp
  • Coriander Powder: 1 Tsp
  • Garam Masala: 1/2 Tsp
  • Red Chilli Powder:
  • Asafetida: Pinch of
  • Salt to Taste
  • Mustard Oil

Method

Step 1

Cut Potato, Onion, Tomato and Brinjal into small pieces.

Step 2

Crush Ginger and Garlic to make fine paste.

Step 3

Heat the pot. Put 1+1/2 serving spoon mustard oil and heat it.

Step 4

Now put Onion seed, Fennel seed, Cumin seed, Mustard seed and Fenugreek seed in oil.

Step 5

Add Onion and saute it on medium flame.

Step 6

Add red and green chilli.

Step 7

Then add ginger garlic paste.

Step 8

Add Potato now. Stir it well and cover the pot with lid and let the potato cook for 3 to 4 minutes.

Step 9

Add pinch of Asafetida and turmeric powder.

Step 10

Now add slices of Brinjal. Mix them well. Turn the flame to low.

Step 11

Add salt to taste now. Cover the pot with lid and cook for 6 to 8 minutes. Stir it in between at an interval of 2 minutes.

Step 12

Now add Coriander powder, Garam masala and red chilli powder. Mix well. Also add chopped Tomato at this time.

Step 13

Again close the lid and cook for another 2 minutes.

Step 14

After that at the end cook it at medium flame for 1 minute to make it bit crispy.

Step 15

Eggplant Vegetable is ready to be served.
