Uttapam also known as Uthappam in Tamil Nadu is a South Indian style Dosa. In Karnataka it is known as Uttappa. Unlike dosa Uttapam is thick with loads of topping. It is bulky and is considered as a complete dish rather than side dish. If you eat 2 to 3 of it you won’t feel hungry for 4 to 5 hours. It is mainly accompanied with Sambhar and Chutney. Coconut or Peanut Chutney are the best suited with it depending upon your taste.
It’s traditionally made with urad dal and rice but many new variations and recipes have been developed by people to suit their taste and ingredient availability. Today in this recipe we will be playing a bit with the traditional recipe to create something new. So instead of Urad Dal we will be using Semolina , known as Suji / Sooji in Hindi. It’s toppings are also going to be much more interesting than the traditional toppings like onions, tomatoes, coriander, chili and capsicum. Since it is one of the most loved dish in South India we will try to create it’s north Indian variant without disturbing it’s originality. So let’s just dive in and prepare this mouthwatering dish in our kitchens.

Once you have collected all these ingredients it’s time cook Uttapam. For this flat dosa tawa is best suited but if you do not have it you have use any tawa. Follow the steps mentioned below to make Uthappam.
Take Semolina in a bowl. Add Curd in it. Mix well. Now slowly add water to it and mix well. Mix a consistent thick batter. Cover the batter and let it ferment for 1/2 hour. After 1/2 an hour, add Black pepper powder, chat masala, cumin powder, red chili powder, salt and baking soda. Mix everything well. Now take another bowl. Add to it chopped onion, tomato, capsicum, carrot, green chili and coriander. Add chat masala and salt to it and mix well. Now take non-stick tawa and heat it on medium flame. Pour some semolina batter and spread it smoothly to make round think uttapam. Put some toppings on top of it. This makes it very healthy. Cook it from both the sides for 4 to 5 minutes. Once it's golden brown remove it from the pan. Semolina Uttapam is ready to be served with Sambhar and Chutney. Enjoy. Method
